Rekayasa Proses sebagai Penggerak Transformasi Koperasi Pangan: Strategi Peningkatan Nilai Tambah, Efisiensi, dan Daya Saing Berkelanjutan

Abstract

Transformasi koperasi pangan sering dipersempit menjadi perubahan identitas visual, perluasan kanal penjualan, atau pembelian mesin baru. Ketiga tindakan tersebut dapat membantu, tetapi tidak menyentuh persoalan pokok apabila aliran bahan, informasi, mutu, dan biaya masih tidak terkendali. Produk yang berubah antar-batch, kapasitas menganggur, susut bahan yang tidak tercatat, serta keputusan produksi tanpa data permintaan akan terus menggerus surplus usaha. Karena itu, transformasi perlu dimulai dari cara koperasi mengubah bahan baku anggota menjadi nilai yang bersedia dibayar pasar.
